My experimental healthier brownie recipe.
Been experimenting with this recipe for a while. Decided I should write it down. I'm not a professional cook, so it may not be up to Betty Crocker recide standards. They taste pretty good though.
1 can drained chick peas
2 overripe bananas
1 egg
1 cup oatmeal
1 can of plain cooked pumpkin
2 tablespoons sugar
1 tsp vanilla
1/2 tsp salt
2 tbsp cocoa powder
1/2 cup chopped nuts (pecans or walnuts)
1/2 cup of dark chocolate chips

Blend the chickpeas and bananas in food processor until a smooth
consistency. Stir in oatmeal and canned pumpkin and other ingredients
and mix well. Pour into brownie pan that has been sprayed with cooking
spray. Bake as you would any other brownies. I used my Nuwave oven, so
not sure what the temp or time would be in a regular oven.
Here's the nutritional information. You could probably get away with less sugar. The bananas add a lot of sweetness. Most of the fat and calories is from the nuts and the chocolate chips, so you can probably use less or substitute if you want lower.
